  1. Heat the garlic-infused oil in a large pan and brown the turkey mince over medium-high heat, breaking it up, about 6 minutes.
  2. Add the red pepper and courgette and saute 4-5 minutes until they start to soften.
  3. Stir in the smoked paprika and the cherry tomatoes and cook 3 minutes more until the tomatoes collapse.
  4. Finish with the spring onion greens and serve hot.
