- Drain the potato and onion, reserving a little oil in the pan.
- Whisk the eggs with salt, then fold in the warm potato and onion.
- Pour the mixture back into the pan and cook over low heat until the base sets.
- Flip the tortilla using a plate and cook the other side until just set.
- Slide onto a plate and let it rest a minute before slicing.
