  1. Heat the olive oil and soften the onion and pepper for a few minutes.
  2. Stir in the cumin and smoked paprika and cook until fragrant.
  3. Add the crushed tomatoes and salt, then simmer until slightly thickened.
  4. Make a well in the sauce and crack the egg into it.
  5. Cover the pan and cook gently until the white is set but the yolk still soft.
  6. Serve hot straight from the pan.
