- Soften the onion and chilli in a dry pan, then add the crushed tomatoes and salt to make a salsa.
- Simmer the salsa until thickened, then keep warm.
- Warm the black beans in a small pan and lightly mash some of them.
- Warm the corn tortilla in a dry pan until soft and pliable.
- Fry the egg until the white sets but the yolk stays runny.
- Layer the tortilla with beans, the fried egg and salsa, then serve.
