  1. Beat the eggs with salt and pepper until fully blended and smooth.
  2. Melt the butter in a non-stick pan over medium heat without browning it.
  3. Pour in the eggs and stir constantly with a spatula to form small curds.
  4. When the base is just set but the top still glossy, stop stirring and smooth the surface.
  5. Tilt the pan and roll the omelette over itself from one side to the other.
  6. Slide the rolled omelette seam-side down onto a plate and serve.
