  1. Cook the quinoa in plenty of water for about 13 minutes, drain and let it cool a little.
  2. Whisk the olive oil and lemon juice together into a simple dressing.
  3. Toss the cooled quinoa with the chickpeas, cucumber, cherry tomatoes and parsley.
  4. Drizzle over the dressing, scatter the feta on top and serve.
