Spicy Chicken Thighs with Cucumber and Cashew Salad

Instructions

  1. Whisk together the fish sauce, black pepper, crushed garlic, chopped chilli and sugar.
  2. Pour half the marinade over the chicken thighs, cover and refrigerate 20 minutes; reserve the rest.
  3. Add the lime juice and caster sugar to the reserved marinade and stir until the sugar dissolves.
  4. Cover the vermicelli noodles with boiling water and leave about 1 minute until softened.
  5. Drain and rinse the noodles under cold water. Mix with the cucumber, mint, spring onions, cashews and the dressing.
  6. Shake excess marinade off the chicken. Heat the oil in a large pan and fry the thighs 3-4 minutes per side until cooked through.
  7. Divide the cucumber and cashew noodle salad onto plates, slice the chicken and serve alongside.
