  1. Preheat the oven to 190 C.
  2. Heat the olive oil in an ovenproof pan and fry the mushrooms until golden.
  3. Add the diced ham and warm it through.
  4. Pour in the beaten eggs and scatter the parmesan over the top.
  5. Cook on the hob until the edges set, then transfer to the oven.
  6. Bake until the centre is just set, then slice and serve.
