- Preheat the oven to 190 C.
- Heat the olive oil in an ovenproof pan and fry the mushrooms until golden.
- Add the diced ham and warm it through.
- Pour in the beaten eggs and scatter the parmesan over the top.
- Cook on the hob until the edges set, then transfer to the oven.
- Bake until the centre is just set, then slice and serve.
