- Preheat the oven to 190 C and lightly grease two cups of a muffin tin.
- Line each cup with slices of ham to form a shell.
- Crack an egg into each ham cup.
- Top with grated cheddar, spring onion and black pepper.
- Bake for about 15 to 18 minutes until the whites are set.
- Let the cups cool briefly, then lift them out and serve.
