  1. Dice the chicken breast. Heat a little oil in a pan over high heat and cook the chicken until browned and cooked through.
  2. Add the instant noodles on top of the chicken, pour in the water and simmer for about 1 minute. Once softened, break up the noodles with a fork and mix evenly with the chicken.
  3. Crack the egg into the centre of the noodles. Scatter mozzarella, chopped spring onion, sweetcorn and sliced chilli over the top.
  4. Cook a few more minutes until the egg white is fully set. Season with nanami togarashi and serve immediately.
