  1. Heat the olive oil and fry the diced potato until golden and almost tender.
  2. Add the onion and chorizo and cook until the chorizo releases its oils.
  3. Sprinkle in the smoked paprika and toss everything to coat.
  4. Make two wells in the hash and crack an egg into each.
  5. Cover and cook until the egg whites set but the yolks stay soft.
  6. Serve the hash hot straight from the pan.
