  1. Heat a large deep pan or wok. Add the beef mince without oil and fry until browned, breaking it into small pieces. Add 1 tablespoon of the soy sauce and a little white pepper. Remove and set aside.
  2. In the same pan, heat a little vegetable oil. Add the beaten eggs and cook like a thin omelette disc, leaving it slightly soft. Remove and set aside.
  3. Add enough vegetable oil to coat the pan bottom. Cook the ginger and garlic over medium heat until fragrant.
  4. Add the onion, carrots and courgette. Increase the heat to high and stir-fry for a few minutes until softened and excess liquid evaporates.
  5. Push the vegetables aside, add the cold cooked rice and stir through. Add the remaining 2 tablespoons soy sauce and return the beef to the pan.
  6. Pour in the sesame oil so it hits the hot pan. Season with white pepper, add the oyster sauce, then return the cooked egg and break it up through the rice.
  7. Serve immediately, garnished with finely sliced spring onions.
