- Heat the oven to 190 C and cook the quinoa for about 13 minutes.
- Saute the pepper in the garlic-infused oil with the cumin and chilli powder 2-3 minutes.
- Mix in the black beans, tomato and cooked quinoa and tip into a baking dish.
- Bake 22-25 minutes until hot and lightly crisp on top.
