Instructions
- Peel and finely chop the onion and garlic.
- Heat the olive oil in a pot, add the onion and garlic and saute until softened.
- Add the crushed tomatoes, water, stock cube, tomato paste, salt, sugar and black pepper. Stir and bring to a boil.
- Simmer gently 10-30 minutes; a longer simmer gives a deeper flavour.
- Add the goat cheese and blend the soup until smooth.
- Serve with fresh basil.
