- Thaw the shrimp by rinsing in cold water in a sieve, or thaw overnight in the refrigerator.
- Cook the egg noodles according to the packet instructions, then drain.
- Mix the soy sauce, sweet chili sauce, lime juice and finely chopped garlic.
- Heat the oil in a wok or large frying pan. Add the frozen wok vegetables and fry until hot and crisp-tender.
- Add the noodles, shrimp and sauce. Toss and heat through briefly, avoiding overcooking the shrimp.
- Finish with the salted peanuts and fresh coriander. Serve immediately.
