  1. Whisk the eggs with the milk, salt and pepper until just combined.
  2. Melt the butter in a non-stick pan over low heat.
  3. Pour in the eggs and let them sit for a few seconds before stirring.
  4. Gently fold the eggs with a spatula, pulling the set edges into the centre.
  5. Remove from heat while still slightly soft and stir through the chives.
  6. Serve immediately while creamy.
