  1. Bring a saucepan of water to the boil. Add the eggs and cook for 5 minutes. Drain, run under cold water and set aside until serving.
  2. Heat the olive oil in a large non-stick frying pan over medium heat. Add the salmon fillets and cook for 3 minutes on each side.
  3. Add the chopped red onion and cook for 2 minutes, breaking up the salmon with a spatula.
  4. Add the gnocchi and season with salt and black pepper. Fry, turning regularly, for 5-10 minutes until the gnocchi is piping hot and starting to crisp at the edges.
  5. Meanwhile, carefully peel the eggs in a bowl of water.
  6. Add the spring onions, capers and chopped gherkins to the pan and mix well. Stir in the dill.
  7. Divide the hash between plates. Halve the eggs lengthways and top each serving with egg. Season to taste and serve with peas or another green vegetable on the side.
