- Heat half the olive oil in a wide pan and fry the aubergine cubes until golden, then remove. Do the same with the courgette.
- Add the rest of the oil and soften the onion and bell pepper, then add the garlic for the last minute.
- Stir in the fresh tomatoes and crushed tomatoes with the thyme, season, and simmer for about 15 minutes.
- Return the aubergine and courgette to the pan and simmer gently for another 15 minutes until everything is tender.
- Stir through the torn basil and serve warm or at room temperature.
