  1. Boil the potato chunks in salted water until tender, about 18 minutes, then drain.
  2. Mash the potatoes with most of the butter and the warm milk until smooth, season with salt and pepper and keep warm.
  3. Coat the fish strips first in flour, then in beaten egg and finally in the breadcrumbs.
  4. Fry the coated fish fingers in the remaining butter over medium heat for 2-3 minutes per side until golden and cooked through.
  5. Serve the fish fingers with the mash and a lemon wedge.
