Instructions

  1. Warm the olive oil, pour in the crushed tomatoes with smoked paprika and simmer for 5 minutes.
  2. Stir in the cooked lentils and spinach and heat through.
  3. Make two wells, crack in the eggs, cover and cook until the whites set, about 6 minutes.
  4. Scatter the crumbled feta over the top and serve from the pan.
