  1. Peel the garlic cloves and chop them finely, or pulse them briefly in a food processor.
  2. Heat the olive oil in a pot. Add the garlic and saute briefly without letting it burn. Sprinkle in the flour and stir into a light roux.
  3. Pour in the stock while stirring, then add the milk. Season with salt and black pepper.
  4. Simmer, stirring, until the soup turns smooth and creamy. Blend if you want a fully even texture.
  5. Toast and dice the bread, slice the red onion into strips and grate the cheese. Serve the soup topped with the toast cubes, red onion and grated cheese.
