  1. Heat the oven to 200 C and parboil the penne for two minutes less than the packet says, then drain.
  2. Fry the diced chicken in the olive oil until golden, then stir in the passata, grated courgette and oregano and season with salt.
  3. Fold the pasta into the sauce, tip into a baking dish, top with mozzarella and bake for about 18 minutes until bubbling.
