- Heat the oven to 160 C. Fry the bacon in an ovenproof pot until crisp, then remove it.
- Pat the beef dry, season and brown the cubes well on all sides in the bacon fat, in batches, then set aside.
- Add the butter, pearl onions, carrot and mushrooms and brown lightly, then stir in the garlic, tomato paste and flour and cook for a minute.
- Pour in the red wine and beef stock, scrape the bottom of the pot, return the beef and bacon, add the bay leaf and thyme and bring to a simmer.
- Cover and transfer to the oven for about 2 hours until the beef is fork-tender, then check the seasoning.
- Remove the bay leaf and serve hot, ideally with bread or potatoes to soak up the sauce.
