- Heat the garlic-infused oil in a pot and brown the tofu cubes on all sides, about 6 minutes.
- Stir in the smoked paprika, then add the buckwheat, crushed tomatoes, courgette and water.
- Cover and simmer 15-18 minutes until the buckwheat is tender and the liquid has thickened.
- Finish with the spring onion greens and serve hot.
