- Bring a large pot of salted water to the boil and cook the penne al dente. Drain, reserving a little pasta water.
- Cut the chicken into thin strips. Heat the olive oil in a large pan and brown the chicken 5-6 minutes; season with salt, black pepper and dried basil.
- Add the garlic and cook briefly. Pour in the cream, stir in two thirds of the Parmesan and add a little pasta water if needed.
- Fold the spinach into the sauce and cook 1-2 minutes, just until the leaves wilt.
- Add the drained penne and toss well. Adjust with salt, pepper or chilli flakes and serve with the remaining Parmesan.
