- Mix the curry paste, mango chutney, turmeric, salt and olive oil in a bowl.
- Halve each chicken breast, add to the marinade and coat well. Leave at least 20 minutes or refrigerate overnight.
- Heat a grill pan over medium heat and grill the chicken 5-6 minutes per side until golden and cooked through.
- Put the couscous in a bowl, pour over the boiling vegetable stock, cover and leave to soak about 5 minutes.
- Fluff the couscous with a fork and stir in the pomegranate seeds.
- Divide the couscous between containers, top each with two pieces of chicken and finish with coriander.
