  1. Heat the oven to 200 C and season the pork loin with salt and pepper.
  2. Toss the root vegetables with the olive oil in a roasting tin.
  3. Place the pork on top and roast for 60 minutes.
  4. Turn the vegetables and roast 10 minutes more.
  5. Rest the pork before slicing and serve with the vegetables.
