Instructions

  1. Heat the oven to 200 C and rub the chicken with half the olive oil and salt.
  2. Toss the potato, carrot and onion with the rest of the oil in a roasting tin.
  3. Nestle the chicken among the vegetables and roast for 60 minutes.
  4. Turn the vegetables once and roast 10 minutes more until golden.
  5. Rest the chicken for 5 minutes before serving.
