- Trim the beef, pat it dry, and cut it into medium cubes.
- Peel and chop the onion. Fry it in the oil until golden. Add a little water, reduce again until the fat separates, and season with salt.
- Add the beef to the onions and cook over high heat until the surface turns pale. When it releases some liquid, add paprika, caraway and two crushed garlic cloves.
- Dice the green pepper and add it to the stew. Add a little water and salt. Simmer gently, seasoning with black pepper. Around halfway through, add a small pinch of thyme and marjoram.
- When the beef is half tender after about 1 hour, add the peeled diced tomato and red wine. Continue cooking until the sauce is brown, thick and concentrated.
- At the end, adjust with the remaining crushed garlic and extra caraway if needed. Serve with boiled potatoes or nokedli if desired.
