Pork ribs with honey and blackberries

  1. Preheat the oven to 175 C.
  2. Remove the silverskin from the back of the ribs by slicing under the membrane and peeling it away. Use a paper towel for grip if needed.
  3. Rub some of the salt into both sides of the ribs. Keep any remaining salt for the glaze.
  4. Mix any remaining salt into the honey. Mash the blackberries and stir them into the honey.
  5. Place the ribs on a rack in a roasting pan. Spread about half the glaze over both sides. Roast meaty side down for 1.5 hours.
  6. Remove the ribs and coat both sides with the remaining glaze. Return to the oven meaty side up for 30-45 minutes, until tender and nearly falling off the bone.
  7. Serve hot.
