Instructions

  1. Heat the oven to 180 C. Line a muffin tin with paper cases or grease it lightly.
  2. Combine the oats, whey protein powder, baking powder, cinnamon and salt in a bowl.
  3. Mash the banana and beat it together with the egg, Greek yogurt, milk and honey until smooth.
  4. Stir the wet mixture into the dry ingredients until just combined, then fold in the blueberries.
  5. Divide the batter between the muffin cases and bake for 18-22 minutes, until risen and set in the centre.
  6. Let the muffins cool in the tin briefly, then transfer to a rack.
