  1. Drain the soaked peas and put them in a pot with the water. Bring to a boil and skim off any foam.
  2. Add the diced pork, onion, carrot, allspice and bay leaf. Lower the heat and simmer, covered, for about 1.5 hours until the peas are soft.
  3. Remove the bay leaf, season with salt and mash some of the peas against the side of the pot to thicken the soup.
  4. Serve hot, traditionally with a dab of mustard on the side.
