Fried semolina pudding with strawberry sauce

  1. Rinse a saucepan with cold water, add the milk, vanilla extract, sugar and a pinch of salt and bring to a boil. Stir in the semolina and cook over medium heat, stirring constantly, until very thick. Off the heat, stir in the butter.
  2. Pour the thick pudding into a glass dish rinsed with cold water, smooth the top and let it cool completely until firm.
  3. Hull the strawberries, dice them into a tall container, add sugar and lemon juice and blend smooth. Pour into a small saucepan and reduce to the thickness you want.
  4. Turn the cooled pudding out onto a board and cut into pieces. Bread the pieces in the usual order: flour, beaten egg, then sweet brioche breadcrumbs.
  5. Fry the breaded pieces in hot oil for 1-2 minutes until golden brown. Serve warm with the strawberry sauce.
