  1. Fry the ham, green pepper and onion in a non-stick pan until softened.
  2. Pour the beaten eggs over the filling.
  3. Let the egg set around the edges, lifting them to let raw egg run underneath.
  4. Scatter the cheddar over one half of the omelette.
  5. Fold the omelette over the cheese and cook briefly to melt it.
  6. Slide onto a plate and serve hot.
