  1. Fry the diced chorizo in a dry pan until it releases its oil and crisps slightly.
  2. Lower the heat and pour in the beaten eggs.
  3. Stir gently, folding the eggs through the chorizo oil.
  4. Cook until the eggs form soft curds and are just set.
  5. Stir through most of the spring onion and season with black pepper.
  6. Serve topped with the remaining spring onion.
