- Crush the chocolate biscuits into crumbs. Mix with melted butter until evenly combined.
- Use the juice from the sour cherry compote, sugar and vanilla pudding powder to cook a thick cherry pudding. Transfer it to a piping bag. Set the cherries aside.
- Whip the mascarpone with the whipping cream and melted dark chocolate until soft and creamy. Transfer to a piping bag.
- Spoon biscuit crumbs into each glass. Add cherry cream and a few cherries, then pipe chocolate mascarpone cream on top. Repeat with another biscuit layer, cherry cream, cherries and chocolate mascarpone.
- Decorate the tops with the remaining cherries and the remaining grated dark chocolate.
