  1. Fry the diced bacon in a hot pan or wok until crisp.
  2. Push the bacon aside, pour in the beaten egg and scramble it lightly.
  3. Add the cold rice and peas and stir-fry over high heat.
  4. Toss everything together so the rice heats through.
  5. Drizzle in the soy sauce and toss to coat evenly.
  6. Stir through the spring onion and serve hot.
